Banana Bread


Grease 2 loaf Pans.

In a Kitchenaid Mixer add:

4 Over-ripe bananas

Add the Following ingredients and beat on Medium speed until well blended:

1 1/2 cups Rice Flour Mix (4 parts White Rice Flour, to 1 part Sweet Rice Flour)

1/2 Cup Coconut Sugar

1 Egg or equivalent substitute

2 Tbsps unsweetened applesauce

1 1/2 Tbsps Algae Oil or melted Coconut oil

1 1/8 tsp Baking Soda

1 tsp Vanilla extract

3/4 tsp Konjac powder

1/4 tsp Cream of Tartar

Pour into the greased loaf pans and bake for 50 – 60 mins. Bread is done when a toothpick inserted into the center comes out clean. Remove from oven and place on a wire rack to cool for 5 minutes.  Run a knife between bread and pan to loosen loaf if necessary. Remove loaf from pan and place on wire rack. (If kept in loaf pan, it will get soggy.)

We store it in the refrigerator unless it is going to be eaten quickly.
