Place in a colander:
2 (1lb) bags of Frozen Peas
Thaw peas slightly by placing the colander under water faucet with cold water, just until no longer frozen, but not all the way thawed.
Allow peas to drain. In a small bowl, combine:
½ Cup Homemade Mayonnaise
2 Tablespoons Lemon Juice
1 ½ Tablespoons Coconut Sugar
½ teaspoon Celtic Sea Salt
Place drained peas in a Large Bowl. Add mayonnaise mixture and stir well, then add:
3 green onions, sliced
4 Carrots, grated
Combine all ingredients well, then refrigerate and chill for at least an hour before serving.
