Garlic Onion Muffins

Makes 12 Muffins

Preheat oven to 400 degrees. Grease a muffin tin or line with paper liners.

In mixing bowl, whisk together the following:

2 Cups Rice Flour Mix

2 Tbsps Coconut Sugar

2 tsp Cream of Tartar

1 tsp baking soda

1 tsp Konjac powder

1 tsp Celtic Sea Salt

In a medium sized bowl, mix together:

1 ½ Cups Coconut Milk

1 medium onion, diced

1 egg (or equivalent substitute)

3 Tbsps Algae Oil or melted Coconut oil

2 Cloves of Garlic, Minced

Add liquid to dry ingredients using a spatula, stirring just until well mixed, about 20 – 25 light strokes. Fill muffin cups to 2/3 full. Bake for 20 minutes or until a toothpick inserted into tops comes out clean.

Remove muffins from tins and cool on wire racks.
