Makes about 2 Dozen Cookies
Preheat oven to 375 degrees.
Cover 2 large cookie sheets with parchment paper.
In a bowl, whisk together:
1 3/4 Cups Rice Flour Mix
3/4 tsp Konjac Powder
1/2 tsp Cream of Tartar
1/2 tsp Celtic Sea Salt
1/4 tsp baking soda
In a mixing bowl, beat on medium speed:
1/2 Cup plus 2 Tbsp Coconut Sugar
1/4 Cup plus 2 Tbsp Algae oil
2 tsp Vanilla Extract
(Optional: ground vanilla beans)
Add dry ingredients to mixing bowl, beat on low until mixture forms a ball. Scoop dough with a cookie dough scooper onto the parchment paper (12 cookies per tray) Flatten each ball with your hand.
Bake for 6 – 8 minutes or until lightly golden on top. Let cool on the cookie sheets for 5 minutes then move them to a cooling rack.
