Vegan Coconut Cake

Preheat oven to 350 degrees.   Grease your cake pan with Coconut Oil.

In a large mixing bowl, whisk together:

1 1/2 Cups Rice Flour Mix (4 parts White Rice Flour to 1 part Sweet Rice Flour)

2/3 Cup Coconut sugar (or Add 1/3 Cup Maple Syrup to wet ingredients)

1/2 Cup Shredded Coconut

1 1/4 teaspoon Baking Soda

3/4 teaspoon Konjac Powder

1/2 teaspoon Cream of Tartar

1/2 teaspoon Celtic Sea Salt

Vegan Chocolate Cake

Vegan Pumpkin Spice Cake

This is a wonderful combination of a Pumpkin Pie and Pumpkin Cake. Some might call it a Pake. 🙂

Preheat oven to 350 degrees.   Grease your cake pan with Coconut Oil.

In a large mixing bowl, whisk together:

1 Cup Sorghum Flour

½ Cup Tapioca Flour

2/3 Cup Coconut sugar (Or 1/3 Cup Maple Syrup added to wet ingredients)

1 1/4 teaspoon Baking Soda

1/2 teaspoon Konjac Powder

1/2 teaspoon Cream of Tartar

1/2 teaspoon Celtic Sea Salt

2 teaspoons Cinnamon

⅛  teaspoon Cloves

¼ teaspoon Pumpkin Pie Spice

Organic Dairy Free Smoked Paprika Cheese

Smoked Paprika DF Cheese

Ingredients:

3 Medium or 6 Small Zucchini

½ Garnet Yam (about 1 cup)

1 Roasted Red Pepper (Fresh or Marinated)

1 Cup Nutritional Yeast

1 Tbsp Smoked Paprika

2 ½ tsp Celtic Sea Salt

½ tsp White Pepper

1 tsp Onion Powder

1 tsp Garlic Powder

2 Tbsps + 1 tsp Lemon Juice

2 Cups of Water (Separated)

4 Tbsps Gelatin

1 tsp Konjac Powder

Cook zucchini and yams in water until soft. Add to blender while they’re still warm. (I tried it after refrigerating the veggies and the cheese did not set correctly.)

In a Vitamix Blender, add 1 cup water, Zucchini, Yam, Red Pepper, Yeast and spices, followed by another cup of water over the top. Blend until thoroughly mixed. GF, YF Bread

In a Kitchenaid mixer, add:

2 Cups Arrowroot Starch/Flour

1 1/2 Cups Sweet Potato Flour

1 1/2 Cups Authentic Foods White Rice Flour

1/2 Cup Tapioca Flour

4 Tablespoons Ground Chia seed

6 Tablespoons Coconut Sugar (**can be left out, or replaced with 3 Tbsps of Maple Syrup, If using Maple Syrup, add it to the wet ingredients.)

2 Tablespoons Konjac Glucomannan Powder

2 Tablespoons Cream of Tartar

3 teaspoons Baking Soda

2 teaspoons Celtic Sea Salt
