Smoked Paprika DF Cheese

Ingredients:

3 Medium or 6 Small Zucchini

½ Garnet Yam (about 1 cup)

1 Roasted Red Pepper (Fresh or Marinated)

1 Cup Nutritional Yeast

1 Tbsp Smoked Paprika

2 ½ tsp Celtic Sea Salt

½ tsp White Pepper

2 Tbsps + 1 tsp Lemon Juice

2 Cups of Water (Separated)

4 Tbsps Gelatin

Cook zucchini and yams in water until soft. Add to blender while they’re still warm. (I tried it after refrigerating the veggies and the cheese did not set correctly.)

In a Vitamix Blender, add 1 cup water, Zucchini, Yam, Red Pepper, Yeast and spices, followed by another cup of water over the top. Blend until thoroughly mixed. Add Gelatin and Konjac and Blend again. Pour into your desired container and refrigerate until solid. Click here for the video: How to make Organic Dairy-Free Smoked Paprika Cheese
